# How to Make It:
01 - Preheat oven to 400°F. Line a baking tray with parchment paper.
02 - Toss chickpeas with olive oil, cumin, smoked paprika, and sea salt. Spread evenly on the baking tray and roast for 25 to 30 minutes, shaking the tray halfway through, until golden and crunchy. Set aside.
03 - Heat 1 tablespoon olive oil in a large pot over medium heat. Add diced onion, sliced carrots, and celery. Cook, stirring occasionally, for 5 to 6 minutes until softened.
04 - Stir in minced garlic, dried thyme, dried oregano, and smoked paprika. Cook for 1 minute until fragrant.
05 - Add chicken pieces to the pot and cook for 3 to 4 minutes, browning lightly but not fully cooking through.
06 - Pour in chicken broth and bring to a boil. Reduce heat to a gentle simmer, cover, and cook for 15 minutes.
07 - Stir in chopped kale and simmer uncovered for 5 minutes until kale is wilted and chicken is cooked through.
08 - Mix in lemon juice and adjust salt and pepper to taste. Serve hot with a generous topping of crispy chickpeas.
