# How to Make It:

- Preheat oven to 375°F and lightly grease a 9x13-inch baking dish.
- Boil rigatoni in salted water until just al dente, about 2 minutes less than package directions; drain and set aside.
- Heat olive oil in a large skillet over medium heat. Cook Italian sausage, breaking it up, until browned, about 5 to 7 minutes. Remove and set aside.
- In the same skillet, sauté diced onion and sliced bell peppers until softened, around 5 minutes. Add minced garlic and cook 1 minute until fragrant.
- Stir in tomato paste, crushed tomatoes, oregano, basil, and red pepper flakes. Season with salt and pepper. Simmer for 10 minutes.
- Return the browned sausage to the skillet and mix thoroughly.
- In a large bowl, toss cooked rigatoni with the sausage and pepper sauce.
- Layer half of the pasta mixture into the prepared baking dish. Sprinkle half the mozzarella and Parmesan cheeses. Add remaining pasta and top with remaining cheeses.
- Cover loosely with foil and bake for 20 minutes. Remove foil and bake an additional 10 to 15 minutes until cheese is bubbly and golden.
- Allow the casserole to rest 5 minutes before garnishing with fresh herbs and serving.
