13 - 2 cups cooked white or brown rice
14 - 1 cup cherry tomatoes, halved
15 - 1 cup cucumber, diced
16 - 1 avocado, sliced
17 - 1/2 cup red onion, thinly sliced
18 - 1/4 cup fresh cilantro or parsley, chopped for garnish
19 - Lime wedges for serving

# How to Make It:

01 - Combine chopped parsley, cilantro, minced garlic, oregano, olive oil, red wine vinegar, red pepper flakes, salt, and black pepper in a mixing bowl. Stir thoroughly until well incorporated. Reserve 1/3 cup of the mixture as finished sauce for serving.
02 - Place chicken breasts in a resealable bag or shallow dish. Pour remaining chimichurri over chicken, ensuring complete coverage. Seal and refrigerate for a minimum of 30 minutes, preferably up to 4 hours for enhanced flavor development.
03 - Preheat grill, grill pan, or skillet to medium-high heat. Allow at least 5 minutes for proper temperature stabilization.
04 - Remove chicken from marinade and pat dry. Season both sides with additional salt and pepper. Cook 6 to 7 minutes per side until cooked through and juices run clear when pierced. Allow chicken to rest for 5 minutes before slicing.
05 - Divide cooked rice equally among 4 serving bowls. Arrange sliced chicken, halved cherry tomatoes, diced cucumber, avocado slices, and thinly sliced red onion on top of each portion.
06 - Drizzle reserved chimichurri sauce over each bowl. Garnish with fresh chopped cilantro or parsley. Serve immediately with lime wedges on the side.

# Expert Tips:

01 -
  • The chimichurri tastes like summer in a bowl, herbaceous and punchy in a way that makes plain chicken actually exciting.
  • It comes together in under an hour but feels far more impressive than the effort required.
  • You'll find yourself making extra sauce just to drizzle on everything else you cook for the next week.
02 -
  • Reserve some chimichurri before the chicken touches it—this is the difference between vibrant sauce and muddied marinade flavors.
  • Don't skip the resting step; it feels like wasted time until you realize it's the difference between dry and juicy chicken.
03 -
  • Use a very sharp knife for slicing the chicken—a dull blade tears it and releases all those juices you want to keep inside.
  • If your avocado isn't perfectly ripe, slice it in the bowl just before serving so it doesn't brown or get mushy.
